Got my offset lit, and a leg of pumped and brined ham on to smoke. Got my neked fattie made with home made cabanossi, mozarella and sundried tomatoes in it's guts ready to put on in a couple hours. It's 7.15 am and so far lifes pretty good for a Saturday.
They work pretty good but require constant attention.
UDS is definately the way to go if you are handy, want long cooks and if you get some automation happening they are set and forget enough to run overnight while you are sleeping.

For $40 odd when ordering the firebox add it in, it's custom made heavy duty seam covered and stitched. It's a damn beauty and the best BBQ cover i have seen. It'll last you years and years.
Did my state and federal excise taxes... Sent in quote requests for logo glassware to egrandstand.com and artonproducts.com... bought a Elijah Craig 18yr for $150 and a EH Taylor small batch for $45..
ran some Jalepeno... nice, but a little to vegetal for consumer quality... will try soaking and removing

I want to know how you've learned to control gravity. Being able to stand on, and place things on the walls really increases the productivity of a space! :>

When I was a kid I lived on cabanosi for a whole summer.
I'll have to make more next sausage day. I think that's the last of it.

@punkin have you seen the cheap offset smokers at bunnings and would they be any good ?
Run out another 530g of oat bourbon today.
Adding more fermenters, another two 550g tanks.
Should have bought a bigger still.

550 grams is a little more than a pound. Kinda small no? You could really go to town with 17.7bbl fermenters instead! :))
