Got some beautiful whole baby calamari yesterday off the seafood truck that goes to my butchers on Thursdays.
Marinated in olive oil, Csalt, pepper, szechuan pepper and a bit of balsamic for the day and then chargrilled while squeezing fresh lemonades from the tree over them.
Both the saffron milk cap (pine mushroom) and the slippery jack (bolete) are easy to identify if you know what they look like and their characteristics. Kids can pick them once they have been shown.
But the warning holds true for those who don't have experience to always take someone with you who does the first time.

In Shaghai we had them with chilli and bbq pork with a big fried dough that looked like a loofah in the middle. I'm looking forward to trying them in different parts of China. The crispy wanton looks delicious.

Heaps of those up Nundle this time of year. They taste like chips. Crispy and yum.
