In 2007 I put a mixture of molasses based rum and red berry concentrate brandy in a new charred oak 30 gallon barrel. I opened it up yesterday and was pleasantly rewarded, very mild flavor not at all like bourbon. This thirty gallon barrel has worked well for long term aging. Smaller barrels lose too much to the angles. Being smaller than a 50 (52?) it ages somewhat faster so this stuff is like say 10 years in a large barrel.

I just drained the last 9 litres out of the second 50l barrell of ujsm. First one is now only 4 or 5 months old and the third one is only 2.5 years old, so she's gunna have to pull her head in shortly =P~
