I am a French guy who works in a distillery for few month. I will try to make Gin with mixing different botanicals with different ratio after distilling them one by one. The problem is, I want to know if it's possible to get Australian native botanicals which have the same flavour as:

Sweet Vernal = Buffalo Grass (Aussie pest/ noxious plant) -> Green/ White Tea/ Warragal Greens/ Lemongrass
Brown Boronia = Lemon/ Citrus Scent -> Lemon Myrtle/ Finger Limes / Quandong / Davidson Plum

Is it recognized as safe for use in foods on Australia?
Doubt it. We go through a fair bit of zubrowka.
