Had a new project thrown my way. Any of you guys have experience in mashing millet?... As in anything I should know apart from basic all-grain mashing?
several years back I recall "milletman" describing his process on AHB. He since went on to open O'Briens brewery specialising in gluten free beer made from millet for coleac sufferers.
@grim, any thoughts on a 100% (except investing in a pair of barn owls)? Also I am following your steam buildout rather closely, I'm helping design another distillery that is basically the same still specs so I thank you for your posts, please keep it up!

Is nitrogen referring to protein level?
i.e wheat used for bakers flour vs all purpose.
Does that present any differences other then handling issues like additional nutrient requirements or differences in final product?

No experience with millet but this might be useful. Millet seems to be a good yield grain and it is on my bucket list...
No experience mashing but it makes for a tasty whiskey!

Me and my friends like millet whiskey very much which I made Uj style. We also tried blending with some brandies and we liked those a lot also.

Another pointer would be Koval. They have a 100% millet And I think they also consult.
An hour consulting prolly can save you big in experimenting $$$'s

100% mashing - treat it like corn/rolled oats.
From my experiments - best used for neutral production(flavourless) - trouble is the price in this part of the world.
