Hi,
just wondering if anyone knows what bit of the wormwood plant to use for absinthe? Is it the leaves / flowers or the stalks?

Stems and leaves, so says this link.
Flowers mostly, but that depends on if you are after flavour. If you want "effects" harvest the leaves and stem before flower. not all wormwood make absinthe. I think only a couple worm wood strains do. Edited- drinking
