A very overdue strip on the go of my apple 1,000L ferment. The apple is seriously old.
That said even on the strip coming off at 52% ABV, it's tasting real nice.
Never heard gravitas used as a measurement of time before.
Not sure i'm keeping up.

Any suggestions for diluted ABV % into the barrel. I double distilled and ran the still in pot still mode (without reflux) and currently have a combined 57.2%. I was considering 50%. Thoughts ??
50% seem appropriate to me if you don't want to overly mute your fruit notes.
Talk about the barrel you plan to use?
