The weird thing was the flavor of the juice. It's wild. It's weirdly and strongly fruity without being a specific fruit flavor. I wasn't expecting that. It has a fair amount of sugar at 14.5 brix/1.059 SG. We didn't get much volume out of it, just 1.5g out of the stalks we had.

How cool would it be if there was some interesting fission yeast growing on corn stalk
Just distilled it. It tastes like sweet corn. Like weirdly exactly like sweet corn. Vegetal, sweet, grassy, sweet corn with some funky-ness. Very low yielding from the juice yield to the fermentation. I read after we started that it has a lot of dextrins. Maybe some enzymes might help. Not sure its worth it large scale but at a hobbyist level it would be fun.
Interesting... Would it be worth paying the farmers to juice the stalk if it were at a decent price?
Basically corn whiskey(kinda?) without the need to mash
