There are a few different ways to slow proof a spirit - One way is to use a slow cooker or sous vide

As an FYI, don't ask Google Bard how to slow proof a spirit:

There are a few different ways to slow proof a spirit. One way is to use a slow cooker or sous vide machine. These methods allow you to keep the spirit at a low temperature for a long period of time, which helps to mellow the alcohol. Another way to slow proof a spirit is to use a technique called "fractional distillation." This method involves distilling the spirit multiple times, each time at a lower temperature. This helps to remove some of the harshest compounds from the spirit, which makes it smoother and more pleasant to drink.

This is why AI will never be able to take over - it's sort of correct but yet completely not. If you think about how a column works it's kind of true - each plate higher it is colder than the one below. And at each plate it is "redistilled". So it's not quite incorrect, but a misinterpretation of how it works.
