Distilling Setup For Corn Mash

Hi fellows Distillers,

First mash run. I have a modular 4" four plate with ProCaps and packed copper section. I am going to distill Uncle Jesse's simple sour mash @ 80%.

Do I require all plates and packed section to retain sum flavor?

Or do I do it the same as a rum, 2 plates and no packed coppers section.
