How to distill botanicals to produce a product with no alcohol?

I have been doing some research, but not finding out a whole lot.

I am looking to find the best way to distill botanicals without alcohol. I did read somewhere that places do it with water and a little bit of alcohol, which presumably helps gets the flavour from the botanical.

If anyone has had any experience with this it would be good to know the ratio of water to alcohol and whether there are any other step in the process to making the outcome alcohol free.
