Im going to try a simple maceration with Elder flower, Linden Flower and Sorbus Domestica once the fruit has been allowed to Blet
any suggestions on ABV?? I was thinking 50% any higher and it may become too astringent

I have made elderflower wine but it was so perfumed it wasn't to my liking. Must have used too many flowers.
