Have had some amylase enzyme for some time. Used it at 155°F for 90 min. Did not convert starch to sugar. Just wondered if it can get old and not work.
I have had enzymes in fridge for 2 years that still seemed to work fine... I would probably do a test of some sorts... mix flour and water and check with iodine...

Used meat type of thermometer also it was not keep in refrigerator. I will try on the flour and water test.Thank You Very Much
Liquid? Stored cool, a year or so. Longer if stored refrigerated. Kept out and warm, 80f - probably 6 months.
I have used alpha/beta/gluco liquid enzymes for well over a year with no noticeable decrease in effectivity...Refrigerated of course
I've had mine in the fridge for over a year. Still good.

Just don’t freeze it.
I have gluco and alpha and the manufacturers say it will last around 2 years when stored at between 0 to 5 Deg.
