Gin Basket for Rum

edited August 2019 in General

I want to add more vanilla into my rums which mature in 100l ex sherry barrels. I am thinking of using the gin basket with vanilla pods but am unsure whether I should do this on the spirit run or do it on the stripping runs as I am sure it would make a big difference to the final product. Any feedback would be appreciated.

  • Why not pop some American oak dominos in the barrel?

I haven't done it but I am with @crozdog on this one. Put some oak dominos in there or (hackspit) try American oak chips that they use for wine. You will get more vanilla so fast you dont know what to do with it. Dose rate should be about 2 grams per litre of spirit. If you use this method remember to oxygenate it to level it out.
A long time ago someone said they used the gin basket for making spiced rum so there is no reason why sticking some vanilla in there wont work. Doing a rum wash is on my list of things to try.

Age with a bean. It’s the truest flavor representation and easiest to control.
