H, not sure what you mean by high temp enzimes. I only buy Alpha for grain mashes to help conversion and since Malted Barley is very rich in Beta it usually results in a complete conversion by iodine test. Far as I know optimum temp for Alpha is 72-75C and above 80C is deactivated. Beta's range 60-65C and above 70C is deactivated.
Hi @captainshooch , someone say that is some other type of alfa and beta ensyms on the market that dont do so hight in temp, so that typ of ensyms shall a stay away from... but do someone nowe any place inside EU there a can by it in small bags typ 1-5 kilo at time only for testing some small bach...
H, I am under the impression, and anyone else that might know better can please chime in, that Alpha and Beta Amylase enzimes are a fixed organic chemical compound that is not manipulated to tolerate higher or lower temps such as yeast, a living organisn that can be "altered", if you wish, by genetic selection to optimize working temp ranges and efficiency so i do not belive you can find such a particular alpha or beta, they are what they are.
Sorry Harley, no knowledge of where to purchase besides a few google searches. One of the more common products (the one i have ) is called hitempase. It's good up to >100C and ideal at 95C. Pretty sure it is a synthetic product made from bacteria.

Am note good in this becouse all my time a need to fix the "optimal plate" for vodka and whisky and all other parts that a need... so am relly greatfull with all help a gets with this.
