Odd problem,
So I made up 500L of UJSM - (yes, five hundred)
Added 125L to what I thought was didn't have any sugar in it.
Over a few weeks I kept adding gain from my beer ferments a few times...
I ran ~170L of it on Saturday, the ferment had stopped, and it had started to clear...
After double distilling I got 35L of end product @ %65, not including the heads and tails that came off...
I tasted the backset after it had cooled down on Sunday and it still tasted sweet. So I decided to add it back, undiluted into another fermenter and add a cup of DAP and 1/2 a cup of EC-1118......
This is 24hrs later.....

All the audio you hear is from the ferment going... its crazy nuts..
My guess is that over our heat wave here in Melb where it was over 40c for 4 days, some of the enzymes in the malt barley from my left over beer got to work on the grain...
I think the ferment stopped because of the high abv....

Regarding the recent heat wave, I had some trouble keeping my Shiraz concentrate (in plastic 20L containers) from splitting.
Does the EC 1118 give any noticeable funky flavours at those temps? I have been wanting to try it but have been putting it off.
Most yeasties will go a bit feral at those temps. There are only a few high temp ones around that we'd use.

So 40C may be stressing it - although the data sheet does show it working up to about 85-90C! Personally I would not be drinking anything fermented at those temps...
Not un distilled yes, but the fermenting was almost done when the heat wave started. I am currently sitting in front of the still, and what im tasting is fantastic.

Only one but it has to be a low wattage.
