Initially I will use the PIDs from my brewery to fire my element, but the long term goal is to wire up a SD Controller, adding a Volt meter.
I will either use a 5500 or 4500 watt element.
My issue is, I have a 4 prong twist lock outlet in my garage NEMA L14-30, and the controller, IIRC, only needs 3 wires.
So I am not sure how or what to drop, modify, or in other words change to make it work.
Can someone shed some light on this for me?

You'll need L1, L2 and ground. Don't need neutral

Yep. If you are using one of those replacement plugs often found on the Home Depot shelf, you can simply exclude the contactor dedicated to the "white" wire.
