Are you looking for unique grains to use yourself? I'm not in Aus, but found it most fruitful to start with the maltsters to understand what is available in what quantities. Unless you are looking to malt yourself.

Gardiner is one that i recognise as being pretty common around here. That's the only one of those i have heard of, not that i have heard a lot. Best thing to do is ring a local seed grader. They know their stuff. Even if the maltsters won't or can't tell you, the graders know the score.
My local grader is Wallamore Seed and Grain, ask for Simon if you call them.
